Commercial Steam Kettle Not Heating
Kettle not coming up to cooking temperature before meal service. Pilot won't stay lit. Heating element open. Pressure relief weeping. Most cases resolve at $260-820. Same-day priority dispatch for institutional emergencies (school cafeterias, hospital kitchens, large catering). $120 commercial diagnostic, waived with repair.
01 · Why steam kettles stop heating
Six causes, ordered by frequency.
1. Pilot won't stay lit (gas kettles, thermopile-driven)
The leading cause across our gas-fired kettle service calls. Cleveland Range KGL and Groen TDB use standing pilots that heat a thermopile to generate millivolts holding the gas valve open. Below 250 mV the valve closes and the burner shuts off. Thermopile output drops with age (year 4-7 typical) from continuous heat exposure and junction oxidation. Replacement runs $260-440 all-in. We test with multimeter at the gas valve terminal before recommending parts.
2. Heating element failure (electric kettles)
On Cleveland Range KEL and Groen AH-1E electric kettles, heating element open circuit is the dominant failure at year 6-10. Element heats jacket water to generate steam; when element fails, kettle won't reach pressure. Diagnosis with multimeter on element terminals: open circuit = full failure, elevated resistance = degraded but partial function. Replacement runs $640-920 all-in.
3. Pressure relief valve weeping or stuck open
The pressure relief valve at the top of the steam jacket vents excess steam to atmosphere at maximum safe pressure. When the valve sticks partially open or leaks continuously, jacket pressure can't build to operating range and the kettle heats but never reaches cooking temperature. Symptom: continuous steam visible from relief valve area, kettle slow to cook. Replacement $280-440. Annual safety inspection per CA Title 8 best practice.
4. Gas valve failure (gas kettles, year 8-12)
The combination gas valve regulates supply pressure and includes the safety solenoid that opens on millivolt signal. Internal valve failures cause symptoms ranging from no main burner ignition while pilot stays lit, to incorrect pressure causing slow recovery. Replacement runs $480-720 all-in.
5. Contactor relay failure (electric kettles, year 7-9)
The contactor relay handles the high-current connection to the heating element. Failure modes: contactor contacts pitted (intermittent operation, slow heating), contactor coil open (no power to element), contactor stuck closed (element runs continuously without thermostat control). Replacement $340-540.
6. Low jacket water charge or scale-insulated element
The steam jacket needs a specific water charge to function correctly. Low charge from gradual evaporation (despite the sealed jacket, small losses occur over years) prevents proper steam generation. Top-off per manufacturer spec. Separately, LA hard water deposits scale on heating elements which acts as thermal insulation, slowing heat transfer. Descale + element inspection runs $360-540.
02 · Standard diagnostic sequence
How we work through a kettle-not-heating call.
- Symptom confirmation. Pilot won't light, won't stay lit, lights but no main burner, electric won't engage, slow heating to setpoint.
- Pilot test (gas) or element continuity (electric). Visual on pilot, multimeter on element resistance.
- Thermopile millivolt test (gas, standing pilot). 250+ mV minimum at gas valve terminal.
- Pressure relief valve inspection. Visible weeping, stuck-open condition.
- Jacket water level and pressure check. Sight glass, pressure gauge.
- Gas valve outlet pressure (gas) or contactor coil voltage (electric). Manometer or multimeter.
- Element scale assessment (electric). Visual on element, descale if scale evident.

Cedars-Sinai cafeteria, Groen AH-1E-30 (year 7)
Element drawing power but heating slowly. Diagnosed contactor relay with pitted contacts (intermittent connection causing inconsistent power). Replaced contactor. Tested heating cycle to setpoint within spec. Total: $120 plus $440 part plus 60 minutes labor = $600.

06 · FAQ
Questions we hear on these calls.
My steam kettle won't reach cooking temperature. What's wrong?
On gas-fired kettles (Cleveland Range KGL, Groen TDB) the leading cause is pilot won't stay lit, which traces to a weak thermopile (year 4-7 typical, $260-440 fix) or a clogged pilot orifice ($200-280 cleaning). On electric kettles (Cleveland Range KEL, Groen AH-1E) the leading cause is heating element failure (year 6-10, $640-920 replacement) or a failed contactor relay ($340-540). On both gas and electric: low jacket water charge prevents proper steam generation; pressure relief valve weeping continuously bleeds off pressure preventing build-up. We diagnose with a methodical sequence rather than jumping to expensive parts.
What's the thermopile millivolt threshold on a commercial steam kettle?
Most commercial steam kettle gas valves use millivolt-driven safety circuits requiring 250+ mV at the gas valve thermopile terminal during pilot operation. Below 250 mV the gas valve closes and the burner shuts off. Thermopile output drops with age (year 4-7 typical replacement window) from continuous heat exposure and oxidation of the junction. We test with a multimeter at the gas valve terminal during the diagnostic visit; replacement runs $260-440 all-in. The cheaper failure modes (thermopile, pilot orifice) are always tested before more expensive components.
Why does my electric kettle take so long to reach steam pressure?
Three possibilities. (1) Heating element degraded: still functional but reduced output. Diagnosis with multimeter on element resistance compared to spec. (2) Element scale buildup from LA hard water: scale acts as thermal insulation, slowing heat transfer from element to jacket water. We descale the jacket and the element on the diagnostic. (3) Jacket water charge low: the steam jacket needs a specific water charge to function; below the minimum the steam pressure won't build properly. Top off per manufacturer spec.
Can a stuck pressure relief valve cause heating problems?
Yes. The pressure relief valve sits at the top of the steam jacket and opens at the maximum safe pressure to vent excess steam. When the valve sticks partially open or leaks continuously, jacket pressure can't build to operating range, the kettle heats but never reaches cooking temperature, and steam vents continuously to atmosphere. Symptom: continuous steam visible from the relief valve area, kettle heating but slow to cook. Replacement runs $280-440 typical. Annual safety inspection is part of CA Title 8 best practice.
What does this typically cost to fix?
Diagnostic is $120, applied to repair. Most kettle not-heating calls resolve at $260-820 all-in. Thermopile $260-440. Gas valve $480-720. Heating element on electric $640-920. Contactor relay $340-540. Pressure relief valve $280-440. Pilot orifice cleaning $200-280. Larger repairs (year 12+ kettles with multiple component issues) can run $1,200-2,000.
How fast can you respond to a kettle down at meal service?
Same-day across LA, OC, Ventura. Phones answered 24/7. We prioritize commercial steam kettle emergencies because of the institutional kitchen volume exposure: a kettle down before lunch service in a school cafeteria or hospital kitchen affects meal counts in the hundreds. Confirmed institutional emergencies typically get 30-90 minute response in central LA, OC, Ventura.
Are you EPA 608 certified for refrigerant on these kettles?
Steam kettles don't use refrigerant; they use sealed water-charge in the jacket plus burner or element heat. EPA 608 doesn't apply directly to kettle work. Our EPA 608 Universal certification (#1346255700410) applies to the broader appliance repair scope. BHGS #A49573 covers the kettle work itself. CA Title 8 occupational safety governs the pressure-relief inspection on jacketed kettles; we provide documentation appropriate for those records.
