Burner Won't Light

Three causes in order of frequency: (1) failed igniter or spark module, no spark visible when attempting ignition; (2) clogged burner orifice, spark present but gas can't flow; (3) failed gas valve, gas not reaching the burner. Try removing the burner cap and grate and cleaning debris first. If the orifice hole appears blocked, a cleaning service may resolve it without parts replacement.

Weak or Yellow Flame

A properly burning gas burner produces a blue flame with a defined cone. Yellow or orange flame indicates incomplete combustion, most commonly from a clogged or partially blocked burner orifice, or a burner cap misaligned after cleaning. A weak flame regardless of color suggests insufficient gas pressure reaching the burner, pointing to a partially failed gas valve.

Pilot Light Won't Stay Lit

Standing pilot systems on older commercial ranges use a thermocouple, a temperature sensor that detects the pilot flame and allows the main gas valve to stay open. When the thermocouple fails, the pilot lights but the main gas valve closes and the burner won't stay on. Thermocouple replacement is a $80–$150 repair. Don't bypass or tape the thermocouple, it's a safety device.

Burner Ignites Then Goes Out

On electronic ignition systems, this usually indicates the flame sensor (sometimes called a thermocouple or flame rod depending on the system) isn't detecting the flame and cutting off the gas valve. The flame starts, the valve opens, then closes when the sensor doesn't confirm sustained combustion. Sensor cleaning or replacement resolves this in most cases.

Uneven Heat / One Section Not Working

On a multi-section range (6-burner, 8-burner), one side or section not lighting while others work normally usually indicates a zone gas valve failure rather than individual burner issues. Zone valves control multiple burners; when a zone valve fails, all burners in that zone go down together. Useful diagnostic: if all three left burners fail simultaneously, it's likely a zone valve, not three separate igniter failures.

Griddle Temperature Inconsistent

Commercial griddle thermostat drift, the thermostat controls griddle surface temperature and wears out over time. A griddle showing 350Β°F but cooking inconsistently at 300Β°F or 420Β°F has a drifted or failing thermostat. We calibrate against a calibrated probe before condemning the thermostat, since sometimes the display is inaccurate rather than the heating system itself.

"Two wok burners won't light, carbon buildup, orifice completely blocked"

Clogged wok ring orifice jets on two of three burners of an American Range wok range running 150,000 BTU per burner. The orifice jets on high-BTU wok burners accumulate carbon at a much faster rate than standard commercial burners, the intense heat conditions and wok cooking technique (sauce and oil splashing directly into the flame) builds carbon deposits in the jet orifice over months.

Removed and cleaned all three wok ring assemblies with commercial carbon solvent, orifice jets on two burners were completely blocked. Tested all three burners through multiple ignition cycles after cleaning, full blue flame within spec on all three. Advised on monthly orifice cleaning as part of kitchen cleaning routine. Third burner had a weakening igniter (still lighting but taking 3–4 attempts), replaced proactively on same visit to prevent a service call within months. Full service: $195 including diagnostic.
Newport Beach (OC) Β· Coastal Steakhouse Β· Garland G60-6T Gas Range

"Left side three burners completely dead, right side works fine"

Zone gas valve failure on a Garland 6-burner range at a Newport Beach steakhouse, the valve controlling the left-side burner zone had failed closed, cutting off gas to all three left burners simultaneously. Classic zone valve failure presentation: three burners go down at the same time rather than one. The restaurant had been running dinner service using only the right three burners, slowing their line and affecting ticket times.

Diagnosed zone valve failure by verifying spark function on all three left burners (sparks present, confirming igniters functional) and testing gas pressure downstream of the valve (none). Replaced zone valve assembly with OEM Garland part. All six burners operational within 90 minutes of arrival. Tested BTU output on all burners against Garland spec. Calibrated charbroiler radiants on adjacent unit while there, found one with corroded gas inlet. Restaurant back to full line capacity for evening service.
Westlake Village (Ventura) Β· American Bistro Β· Vulcan V6B Range

"One burner ignites but goes out after 5 seconds"

Failed flame sensor on a Vulcan V6B electronic ignition range at a Westlake Village bistro, the flame rod (a probe that detects the presence of flame and holds the gas valve open) had corroded and was no longer producing adequate ionization current to signal the control board. The burner would ignite, the control board would check for flame confirmation, fail to detect it, and cut the gas valve, all within a few seconds.

Identified flame rod failure by measuring ionization current with a microamp meter, reading 0.2 Β΅A vs the 1.5 Β΅A minimum for reliable valve hold-in. Replaced flame rod. Tested through 10 full ignition cycles, flame rod reading 3.8 Β΅A, consistent valve hold-in. Also cleaned burner cap and orifice on the affected burner which had visible grease buildup contributing to inconsistent flame geometry. Total repair: $165 including diagnostic.
Koreatown Β· Korean BBQ Restaurant Β· Imperial Range IR-6

"Pilot light keeps going out, burners won't stay lit"

Failed thermocouple on a standing-pilot Imperial range, the thermocouple generates a small millivolt signal when heated by the pilot flame, which holds the main gas safety valve open. When the thermocouple fails, the valve defaults closed (the safe state), and no burners will ignite or stay on. The restaurant had been relighting the pilot every 30–45 minutes until it stopped staying lit at all.

Measured thermocouple millivolt output, reading 8 mV vs the 18–20 mV required to hold the safety valve open. Replaced thermocouple. Pilot stayed lit on first attempt after replacement. Verified main burner operation on all 6 positions. Also cleaned pilot orifice which had partial blockage contributing to pilot instability. Explained thermocouple function to kitchen manager, next time it goes out temporarily, it's the pilot orifice; won't stay lit at all, it's the thermocouple. Took 5 minutes but will save them a confused phone call in the future.
