01, About This Service

A commercial range defines a restaurant kitchen. When it goes down, service stops.

Vulcan VR series, Garland Master Series, Wolf Challenger XL, American Range Performer. These are the industrial workhorses LA restaurants depend on for 12–16 hour service days. Restaurant ranges differ from residential cooking equipment in every way that matters: BTU output (typically 25,000–35,000 per burner vs 12,000–18,000 residential), heavy-gauge steel construction, oven temps holding 500–550°F continuous, salamander broiler above for finishing, multiple-zone cooking surfaces.

Our techs service the full commercial range lineup across LA, Orange, Ventura, San Bernardino, Riverside. Vulcan VR-24, VR-36, VR-48, VR-60, VR-72 (the most common LA restaurant ranges). Garland Master Series M48, M60, U-Series. Wolf Challenger XL CHSC60, CHSC72. American Range Performer ARTGS-244, ARTGS-360 (Cypress CA local manufacturer, easier parts logistics across the LA basin). Southbend, Imperial, Montague heavy-duty configurations.

$120 commercial diagnostic, waived with repair. BHGS Licensed #A49573. EPA 608 Universal #1346255700410. CSLB C-20 HVAC scope for adjacent commercial gas and refrigeration work that touches the range install. BBB A+. Phones answered 24/7.

For burner-only and high-BTU wok range work, see commercial stove repair. This page covers full ranges with integrated ovens, Vulcan VR series and equivalents with the standard oven cavity below the burner top.

02, Top Range Failures

What our techs see most often, in rough order of frequency

Eight failure modes account for nearly every commercial range call we run. The first four are routine wear and inexpensive. The bottom three are the conversations where we sometimes recommend major service over piecemeal repair.

1

Igniter failure (year 4–7)

Pilot or electronic ignition wear, the single most common range call. Vulcan and Garland use different ignition systems with different failure signatures. Replacement runs $260–$440 per burner. We carry the common Vulcan and Garland igniters on the van.

2

Thermocouple wear (year 5–8)

Safety device that shuts off the gas if the pilot extinguishes. When it fails, the burner ignites and then shuts down within seconds. Replacement $220–$340. Don't bypass it.

3

Burner head clog

Grease and food carbon build into the burner head over months of service. Cleaning service $180–$290 per burner, no parts needed if caught before the orifice fully blocks.

4

Oven thermostat drift

Temperature accuracy degrades, the displayed 350°F is actually 320°F or 390°F at the rack. Calibration first if the mechanism is sound ($290–$540), full replacement if drifted past calibration range.

5

Door gasket compression

Heat seal degrades from years of door slams and thermal cycling. Once it leaks, the oven works harder and uneven cooking shows up before the gas bill does. Replacement $290–$540.

6

Salamander broiler igniter

Heavy-use restaurant ranges with integrated salamander above the burner top. Same igniter category as a burner igniter, $260–$440, but mounted in a hotter zone so wear shows up earlier. Few shops in LA take salamander work; we do.

7

Gas valve failure (year 10+)

Less common, more expensive. Full gas valve replacement $580–$980. When a 12-year-old range has its third gas valve fail in 18 months, the conversation shifts toward a major rebuild or replacement.

8

Convection fan motor (if convection oven)

Year 7–10 on ranges with convection in the oven cavity. Motor replacement $480–$720. Bearings give the audible warning a few months out, worth scheduling proactively.

03, Range Configurations We Service

Every standard commercial range layout in LA kitchens

4-Burner Standard

$3,000–$6,000 unit

Vulcan VR-24, Garland M24, American Range ARTGS-244. Smaller restaurants, butler's pantry, secondary line.

6-Burner Standard

$5,000–$10,000 unit

VR-36, M36, ARTGS-360. The most common LA restaurant range, the workhorse of the SoCal independent restaurant.

6-Burner with Griddle

$7,000–$13,000 unit

Vulcan VR-36-1G24 (24-inch griddle right side), Garland M36-2G similar. Adds breakfast and short-order capacity.

8-Burner with French Top

$10,000–$18,000 unit

Vulcan VR-48-FT, Wolf Challenger XL CHSC48-FT. French top is the solid plate cooking surface for simmering and specialty work.

10-Burner Double Oven

$14,000–$25,000+ unit

Vulcan VR-60, Garland M60, Wolf CHSC60. Full-service kitchens running heavy dinner volume.

Restaurant Range with Salamander

$15,000–$30,000+ unit

VR-60 plus integrated salamander broiler above. Salamander = high-heat finishing broiler. Pre-fire LA permitting required on new installs.

04, Real Repair Stories

Recent commercial range work, with the numbers

Composite examples drawn from recent service calls. The pattern is consistent: a clear failure mode, a known part, an honest price.

West Hollywood

Vulcan VR-36, igniter + thermocouple on 2 burners

Year 6 typical wear pattern. Both failures on the same side, which made the diagnosis fast. $560 including parts and labor. The other four burners tested clean and got a documented baseline for the next visit.

Beverly Hills

Wolf Challenger XL CHSC60 with salamander, oven thermostat drift

Steakhouse running 500°F oven holds. Calibration showed 470°F actual. Recalibrated against a certified probe rather than replacing the thermostat. $440 calibration plus verification across three temperature setpoints.

Pasadena

Garland M48-2G (with griddle), gas valve replacement

8 years old, multiple burner inconsistencies pointed to upstream pressure rather than individual igniters. Manometer at the inlet confirmed pressure drop under load. Full gas valve replacement $890. Burner output back to spec across all six positions.

Long Beach

American Range ARTGS-244 4-burner, hotel kitchen

Door gasket leak plus single-burner igniter, both year-7 wear. $560 combined. Local manufacturer parts arrived next-day from Cypress CA, faster than the typical 2–5 day ship from out-of-state OEMs.

Burbank

Vulcan VR-72, annual major service, catering kitchen

Multi-zone service: 3 burner igniters, 1 thermocouple, oven thermostat calibration, oven door gasket. $1,400 total, scheduled during their off-day so service was uninterrupted. This is the annual-service shape we recommend on heavy-use ranges.

Pacific Palisades

Wolf CHSC36 home-restaurant install

Private dining setup with commercial Wolf in a residential structure. Igniter on one burner plus salamander broiler service. $720. Confirmed the install was permitted correctly, which matters on Wolf commercial in a home setting because the parts cross-reference catches a lot of techs off guard.

07, Brands We Service

Every commercial range brand running in SoCal kitchens

Direct brand-page links for the units we see most often. Wolf here is the commercial Restaurant Equipment line under the Sub-Zero Group umbrella, separate product family from residential Wolf cooking. Different parts catalog, different service.

American Range is manufactured in Cypress CA. Local manufacturer means faster parts logistics across the LA basin and direct factory tech support, a real differentiator on time-sensitive restaurant calls. Vulcan is part of the ITW Food Equipment Group (sister brands include Hobart dishwashers, Traulsen refrigeration, Wolf restaurant equipment). Garland is a Welbilt brand.

08, Why Restaurants Call Us Back

Specific advantages, not slogans

BHGS Licensed #A49573

Appliance repair primary license. Verifiable on the California BHGS public lookup.

EPA 608 Universal #1346255700410

Refrigeration certification, relevant when the range is adjacent to a walk-in or prep table that needs concurrent service.

CSLB C-20 HVAC scope

Adjacent commercial gas and refrigeration work covered under appropriate California contractor scope.

LA gas pressure diagnostic expertise

Local infrastructure knowledge. Pre-2000 LA gas lines occasionally deliver below commercial range minimum at peak load.

Salamander broiler experience

Fewer shops handle integrated salamander work. Overhead mounting and higher heat-zone tolerances scare off generalists.

Multi-brand parts inventory on the van

Common Vulcan and Garland igniters and thermocouples ride with the tech. First-visit fix rate stays high on routine wear.

Same-day across 5 counties

LA, Orange, Ventura, San Bernardino, Riverside. Eight branch territories so the tech is dispatched from the closest one.

24/7 phone answering

No emergency surcharge. The line is staffed every hour of the day.

Permitting awareness

Pre-fire permitting on salamander and heavy-duty installations flagged before work starts, not after the inspector visits.

BBB A+ Accredited

Verifiable accreditation, not a self-claimed badge.

09, Frequently Asked Questions

Commercial range repair, what LA operators ask us

What's the difference between a commercial range and residential cooking equipment?

BTU output (25,000–35,000 commercial vs 12,000–18,000 residential per burner), heavy-gauge steel construction built for continuous 12–16 hour service vs intermittent home use, oven temps holding 500–550°F continuous, integrated salamander broiler options, and parts catalogs designed for component-level service. A commercial range lasts 15–20+ years with proper service. A residential range pushed into restaurant duty fails inside 18 months.

How often should I service my commercial range?

Annual major service is the baseline: igniter and thermocouple inspection on every burner, oven thermostat calibration against a certified probe, gas valve operation check, salamander broiler verification if equipped. Quarterly visual inspection by kitchen staff catches grease buildup before it becomes an igniter failure. Common service parts ride on the van, so a diagnostic visit during operating hours doesn't have to interrupt service.

My salamander broiler igniter doesn't work. Can you fix it?

Yes. The salamander broiler is integrated with the range top and uses a similar igniter and thermocouple system, just mounted overhead. Igniter replacement runs $260–$440. A lot of repair shops in LA won't take salamander work because they're not set up for the overhead mounting and the higher heat-zone tolerances. We do, and we keep the common salamander igniters on the van.

Vulcan vs Garland vs Wolf, which is most common in LA?

Vulcan VR series is the most common range we see in LA, mid-priced, durable, parts readily available. Garland Master Series sits a tier above at the premium end. Wolf Challenger XL is high-end ($15,000+ ranges in steakhouses and hotel kitchens). American Range, made in Cypress CA, shows up often in LA-area kitchens because the manufacturer is local, easier parts logistics and direct factory tech support.

Can you calibrate my oven thermostat?

Yes. We use certified thermocouples and digital calibration equipment. Drift is typical at year 4–7. If the thermostat is drifted but mechanically sound, recalibration runs $290–$540 and saves the cost of a full replacement. If the thermostat is shot, replacement is in the same range. We test before condemning the part.

My range gas pressure is inconsistent. What's the issue?

LA gas pressure varies by neighborhood and feeder line. Pre-2000 LA gas infrastructure occasionally delivers below 7 inches water column, which is below the minimum spec for a heavy-duty commercial range. We always diagnose pressure first with a manometer at the range inlet before condemning a regulator, igniter, or gas valve. About one in five "weak flame" calls turns out to be supply pressure rather than the range itself.

Do you service Wolf commercial restaurant equipment?

Yes. Wolf Restaurant Equipment is the commercial line under the Sub-Zero Group umbrella, separate product family from residential Wolf cooking. Different parts catalogs, different service procedures. Challenger XL CHSC60 and CHSC72 are the ranges we see most often in LA. We have access to the authorized parts network and we know the difference between commercial Wolf and residential Wolf parts, important, because they don't cross-reference.

What's your warranty?

90 days SDAR labor warranty on every commercial range repair. OEM parts carry the manufacturer's own warranty (typically 90 days to 1 year depending on the component), processed separately through the brand's service network. We document every part number installed and the warranty terms apply directly without us as middleman.
