What we get called to here is the industrial belt and the strip-mall kitchens that feed it: the restaurants along Hawthorne and Pacific Coast Highway, the sushi bars and izakayas around Old Torrance and the Del Amo corridor, the break rooms and cafeterias attached to the aerospace and auto plants on the east side. That mix is heavy on under-counter refrigeration, bar coolers and ice — and light on the showpiece equipment. A tasting-room bar cooler can wait until Tuesday; a walk-in at a restaurant doing weekday lunch volume cannot. We put walk-in and ice calls on same-day priority for that reason.

Torrance backyards run to the practical end of outdoor cooking — a gas grill on a slab, a patio heater that comes out in January, the occasional built-in island up on the Hollywood Riviera bluff. The split that matters here is a couple of miles wide: west of Hawthorne the marine layer puts salt on everything overnight, and grates, burner tubes and igniter electrodes corrode on a coastal clock; inland toward the 405 the same grill just collects dust and spiders in the venturis. Both end at the same phone call — it won't light, or it lights and won't hold heat — and the fix is rarely the part the owner expects.
