02 Β· What cleaning prevents
Three problems regular cleaning prevents.
Problem 1: Mineral scale on evaporator
Calcium and magnesium in water (especially LA hard water) build on evaporator surfaces. Scale insulates the evaporator. An insulated evaporator freezes ice slower. Slow freeze equals production drops 20 to 40%. Continued scale eventually destroys the evaporator entirely.
The economic math:
- Routine cleaning: $200 to $340 per service, 2 to 4 times per year equals $400 to $1,360 annually.
- Scale-destroyed evaporator replacement: $1,500 to $3,000.
- Year 3 to 5 evaporator failure on neglected machine vs year 10 to 15 on properly cleaned machine equals 5 to 10 extra years of service life.

Problem 2: Bacterial / yeast / mold growth
Ice machines are warm, wet, and dark, a perfect microbial environment. A Vermont University study found the average untouched commercial ice machine had higher bacterial counts than toilet seats. Health inspectors take swab samples on commercial ice machines as routine inspection.
Bacterial growth means health code violations. Yeast and mold mean ice taste and odor problems means customer complaints.
Problem 3: Slime in water lines
Biological film forms in water inlet lines. Causes water inlet valve failures (slime jams the diaphragm), harvest cycle issues (water flow restrictions), and reduced ice production. Cleaning the water lines as part of cleaning service prevents this.
03 Β· Standard cleaning procedure
What we actually do during a cleaning service call.
- Pre-service diagnostic. Visual inspection. Check production rate vs nameplate. Note any operational issues. If repair is also needed, we identify it now and quote separately.
- Drain and empty. Drain the unit completely. Remove all ice from bin. Disconnect power for safety.
- Apply brand-spec cleaner. Different brands use different cleaners, this matters:
- Hoshizaki: Hoshizaki Scale Away (brand-spec)
- Manitowoc: Manitowoc Cleen Ice (brand-spec)
- Scotsman / Ice-O-Matic / generic: Nu-Calgon Ice Machine Cleaner (industry standard nickel-safe)
- Run cleaning cycle. Most modern machines (Manitowoc Indigo NXT, Hoshizaki KM-Edge, Scotsman Prodigy ELITE) have built-in cleaning programs. Older machines: manual circulation through the evaporator.
- Drain and rinse. Thorough rinsing. No cleaner residue allowed in food-contact surfaces.
- Sanitize. Apply food-safe sanitizer (US Ice Machine Sanitizer or similar). Sanitization is a separate step from cleaning, different chemistry, different purpose.
- Water filter replacement. Filter replacement timing depends on filter system:
- 3M Cuno filters (common Manitowoc): 6-month typical
- Pentair Everpure (common Hoshizaki, Scotsman): 6-month typical
- OptiPure (premium installations): 6 to 12 month
- Manitowoc K-Series (Manitowoc-specific): per Manitowoc spec timing
- Restart, verify, discard first batch. Restart machine. Monitor harvest cycles. Always discard the first batch of ice even after thorough rinsing, minor cleaner residue makes ice unsafe.
- Service documentation. We document service for your health inspection records: date, technician, cleaner used, sanitizer used, filter replaced, water test results if applicable.
Total time: 90 minutes to 2.5 hours typical depending on machine size plus cleaning frequency history (heavily neglected machines take longer).

Ice machine cleaning, common questions.
How often should I clean my commercial ice machine?
2 to 4 times per year is industry standard. Higher for high-volume operations (bars, hotels, hospitals) and hard water areas. Lower (twice annually) for low-volume installations with premium water filtration. We assess your usage and water quality to set the right interval.
Why can't my staff just clean it?
Staff cleaning is supplementary, not a substitute. Surface cleaning (wipe-down of exterior, accessible interior surfaces) is staff scope. Evaporator deep cleaning requires draining, brand-spec cleaner application, cleaning cycle programming, sanitization, and water filter replacement. These require a trained service technician plus brand-spec materials. Staff don't have access to brand-spec cleaners or filter inventory.
Doesn't my Manitowoc / Hoshizaki / Scotsman have automatic cleaning?
Automatic cleaning cycles flush water through the system, they don't remove scale or biological growth. Automatic cycles are supplementary, not a substitute for proper cleaning service. Most manufacturers explicitly state in their manuals that machines require periodic professional cleaning despite automatic cycles.
What's the difference between cleaning and sanitization?
Different chemistry, different purpose. Cleaning (Nu-Calgon, Hoshizaki Scale Away, Manitowoc Cleen Ice) removes mineral scale and biological growth. Sanitization (food-safe sanitizer, separate chemical) kills remaining microbes after cleaning. Both are required for proper service. We do both as part of every cleaning visit.
Can my appliance repair shop do ice machine cleaning?
Most won't. Cleaning takes 90 minutes to 2.5 hours, requires brand-spec materials, and customers undervalue it vs reactive repair. Many shops deflect cleaning service to maintain higher hourly billing on emergency repairs. We do cleaning routinely because we know it prevents 60% of emergency calls.
My ice machine has H-Guard Plus / AlphaSan / LuminIce. Do I still need cleaning?
Yes. These antimicrobial systems slow biological growth but do not eliminate scale formation from minerals. Scale is calcium and magnesium from water, antimicrobial coatings don't address that. Cleaning interval can be slightly extended (3 to 4 months vs 2 to 3 months) but cleaning is still required.
