Architecture is fundamentally different from cube ice. Inside a flake machine, water flows into a cylindrical evaporator drum. As water freezes on the inner drum surface, an auger (heavy spiral metal screw) inside the drum continuously rotates, scraping the freezing ice off the drum surface. The mechanical scraping breaks the ice into snow-like flakes. The auger drives the flakes upward through the drum, discharging into the bin.
This means flake ice machines have mechanical wear failures that cube ice machines don't have. Auger motors, gear reducers, drive shaft seals, these are flake-specific service items. We know them.

What we diagnose most often, in rough order of frequency.
- Auger gear reducer wear (year 6 to 9), the most common flake-specific failure. Heavy mechanical load on the auger gearbox eventually causes wear. Symptom: noise increases gradually, ice production decreases, sometimes seizure. Replacement requires partial machine disassembly. $580 to $880.
- Auger motor failure (year 8 to 12). Main drive motor for the auger system. Replacement.
- Drive shaft seal wear (year 5 to 7). Water leakage from machine, sometimes water in food-contact areas (critical health issue if seal fails completely). Replacement seals.
- Scale buildup on evaporator drum interior. Different from cube but same root cause (calcium and magnesium deposits in SoCal hard water). Reduces ice production efficiency. Cleaning resolves. $200 to $340.

My flake ice machine is making slush instead of proper flake. What's wrong?
Three usual causes: refrigerant low (leak), auger speed sensor drift, or scale buildup affecting freeze efficiency. We diagnose with refrigerant gauges, auger speed verification, and visual evaporator drum inspection. The slush vs proper-flake distinction matters because slush in produce or seafood display defeats the purpose. Diagnostic order is targeted, not guess-and-replace.
Why are auger repairs so expensive?
Mechanical components inside the evaporator drum require partial machine disassembly to access. Auger gear reducer replacement is 2 to 3 hours of labor plus heavy-duty parts ($580 to $880 for the gear reducer). Worth it because the alternative is replacing the machine ($4,500 to $8,000+).
