01 Β· Combi oven service
Combi ovens combine steam and convection in one chamber. SoCal hard water decides their lifespan.
A combi oven (Rational, Alto-Shaam, Convotherm, Henny Penny FlexFusion, Unox ChefTop) is the premium tier of commercial cooking. $15,000 to $50,000 new. Steam injection plus forced-air convection in a single chamber lets a high-end restaurant or hotel kitchen run multiple cooking modes without separate equipment. The catch: combi ovens have steam generation systems that convection-only ovens don't have. More parts, more failure modes, more sensitivity to water quality.
SoCal hard water is the practical dominant variable for combi oven service across LA, Orange, Ventura, San Bernardino, and Riverside. Metropolitan Water District averages 10 to 18 grains per gallon hardness. That calcium and magnesium deposits on steam generator surfaces, sensors, water inlet valves, and drain components every cycle. Without annual descaling, a $30,000 Rational SCC drops production within 3 to 5 years. With descaling, it runs at spec for 15+ years.
We service combi ovens across all five SoCal counties. $120 commercial diagnostic, waived with repair. BHGS Licensed #A49573. EPA 608 Universal certified (#1346255700410). BBB A+ accredited. Phones answered 24/7.
02 Β· Common combi oven failures
What we diagnose most often.
- Steam generator scale buildup. Most common LA-area failure. Calcium and magnesium deposits insulate the heating element, reduce steam output, sometimes destroy the sensor. Annual descaling resolves before damage. Reactive descaling on heavily scaled units takes longer and may require sensor replacement. $300 to $500 preventive, $700 to $1,200 reactive.
- Steam generator sensor failure. Reads incorrect water level or temperature. Often the downstream consequence of scale buildup. Sensor replacement $300 to $500.
- Convection fan motor (year 7 to 10). Same wear pattern as convection-only ovens but combi adds steam-environment moisture stress. $480 to $720 replacement.
- Door gasket compression. Combi requires tighter seal than convection-only because of steam pressure. Heavy-duty silicone gasket lasts 4 to 6 years on heavy-use. $260 to $440 per gasket.
- Control panel touchscreen failure. Rational SCC color displays cluster year 5 to 8. iCombi Pro touchscreens use different architecture. $1,200 to $1,800 replacement (premium component).
- Water inlet valve. Combi takes more water than convection-only. Solenoid wear faster. $260 to $420 replacement.
- Drain pump. Combi drains more frequently than convection. Pump wear at year 5 to 8. $300 to $480 replacement.
- Heating element (convection side). Standard wear at year 8 to 12. $480 to $780 replacement.

08 Β· FAQ
Combi oven repair, common questions.
How often does my combi oven need descaling in LA?
Annual descaling minimum for any combi oven in the LA basin, Orange County, and the Inland Empire. SoCal hard water (Metropolitan Water District averages 10 to 18 grains per gallon hardness) deposits calcium and magnesium on steam generator surfaces fast. Twice-yearly descaling for high-volume operations (banquet kitchens, hotel breakfast service). Descaling service runs $300 to $500 and prevents the $1,200 to $2,000 steam generator sensor and heater replacements that follow neglect.
Do you service Rational SCC and iCombi Pro?
Yes. Rational SelfCookingCenter (SCC) and iCombi Pro are our two most common Rational service calls. Different parts catalogs, not interchangeable, we identify the generation by serial number first. SCC color-touchscreen failures cluster year 5 to 8. iCombi Pro is newer architecture with different control board failure patterns. We coordinate with Rational service network for proprietary parts. See also our Rational combi oven repair brand page.
My combi oven won't generate steam. What's wrong?
Three usual causes: scale buildup blocking the steam generator (most common in LA, descaling resolves), steam generator sensor failure (sensor reads incorrect water level or temperature), or water inlet valve restriction. We diagnose with visual inspection of the generator chamber plus electrical tests on the sensor and valve. $480 to $1,200 typical repair depending on which component failed.
Why are combi oven repairs more expensive than convection oven repairs?
Combi ovens have steam generation systems that convection ovens don't have. Steam generator, water inlet plumbing, drain pump, condensation handling, plus all the convection components. More parts equals more failure modes and higher parts cost. A Rational SCC steam generator sensor runs $300 to $500. A convection oven thermostat runs $80 to $180. Different equipment tier, different cost structure.
Do you service Alto-Shaam Combitherm and Convotherm?
Yes. Alto-Shaam Combitherm CT Express and CT Proformance are common in hotel banquet kitchens across LA. Independent Wisconsin family company (Halco family, since 1955). Convotherm OEB series is Welbilt-owned, common in mid-tier banquet operations. We have parts access through both authorized service networks. See Alto-Shaam brand page.
What's your warranty?
90 days SDAR labor warranty on every repair. Component manufacturer warranties (Rational, Alto-Shaam, Convotherm, Henny Penny FlexFusion) processed separately through the manufacturer's authorized network. BHGS Licensed #A49573. EPA 608 Universal certified (#1346255700410). BBB A+ accredited.
Can you do preventive descaling contracts?
Yes. Annual descaling contracts for single units, semi-annual for high-volume (hotel breakfast service, banquet kitchens). Contract pricing reduces per-visit cost vs reactive scheduling. We document descaling for your equipment maintenance records. Contact us for fleet pricing on 3+ machines.
