Commercial convection ovens (Blodgett Mark V and ZEPHAIRE, Vulcan VC4 and VC6, Southbend Marathoner Gold, Garland Master Series, Bakers Pride Cyclone) are the dominant convection equipment in LA, Orange, Ventura, San Bernardino, and Riverside restaurant and bakery kitchens. The failure modes are predictable. Convection fan motor at year 6 to 9. Drive belt wear (Blodgett Mark V specifically, belt-driven fan adds a routine wear item). Igniter on gas models at year 5 to 8. My convection oven won't ignite. What's wrong?

Most common cause on gas convection ovens: igniter failure (year 5 to 8 typical). On Vulcan VC4 and VC6, the spark igniter electrode pits and stops sparking reliably. Replacement runs $180 to $320. Less common: failed gas valve coil, flame sensor coated with combustion residue, thermocouple weak. We diagnose with multimeter test on the igniter, gas pressure check, and visual inspection of the burner assembly.

Do you service Blodgett Mark V and ZEPHAIRE convection ovens?

Yes. Blodgett Mark V is one of the most common LA bakery and restaurant convection ovens. Common service: convection fan motor (year 6 to 9), drive belt wear (Mark V uses belt-driven fan, replacement $180 to $280), thermostat, door gasket. How long does a commercial convection oven last?

12 to 18 years with proper maintenance. Heavy-use bakery ovens skew toward 12, lower-volume restaurant ovens to 18+. The convection fan motor is usually the limiting component (year 6 to 10 typical wear). Brass burner ovens (Vulcan VC, Southbend Marathoner Gold) outlast cast iron alternatives. Door gasket is a routine replace at year 4 to 7 across all brands.

My convection oven heats unevenly. What's wrong?

Most likely the convection fan is not circulating air effectively. Possibilities: fan motor speed reduced from worn bearings (motor still runs but at lower RPM), drive belt slipping or stretched (Blodgett Mark V especially), or fan blade itself loose on the shaft. Also check door gasket compression, a leaky door drops oven temperature on the door side. We diagnose with infrared thermometer at multiple rack positions and fan RPM measurement.

Do you do annual maintenance contracts on convection ovens?

Yes. Annual contracts include door gasket inspection, fan motor amperage measurement, igniter and burner inspection (gas), thermostat calibration, drive belt tension check (where applicable). Contract pricing reduces per-visit cost vs reactive scheduling. Bakery and high-volume restaurant operations especially benefit from annual contracts because the failure modes are predictable.

Vulcan vs Blodgett vs Southbend, which is more reliable?

Honest answer. Vulcan VC4 and VC6 (ITW Food Equipment Group) have the broadest LA install base and the most accessible parts pipeline through ITW distribution. Blodgett Mark V (Middleby) is the bakery favorite for even bake but has the belt-drive fan that adds a routine wear item. Southbend Marathoner Gold (Middleby) sits between, slightly less common in LA. All three are repairable through year 15+ with parts availability.
