01 · Restaurant wine cellar cooling
A restaurant wine cellar at 65°F and 35% humidity is destroying inventory in real time.
Wine bottles need 55 to 58°F (red), 50 to 55°F (white), 45 to 50°F (sparkling), AND 50 to 70% relative humidity to preserve corks and prevent oxidation. When the cooling system fails or drifts, premium wine inventory can lose value fast. A $400 Burgundy at 70°F for a week is not the same wine.
This is not residential wine fridge repair. Restaurant wine rooms use specialized commercial cooling: Wine Guardian (most common LA restaurant spec, Quincy IL, premium ducted and ductless systems), CellarPro (West Sacramento CA, specialty self-contained units), KoolR (premium custom installations), Breezaire (entry-tier through-the-wall units), Vinotemp Commercial (LA-based, common in hotels). 02 · Typical wine cellar cooling failures
What we diagnose most often on commercial wine cellars.
- Humidity drift (year 4 to 7), the most common wine cellar issue. Cellar holding temp but humidity dropping below 50% RH. Cause: condensate not returning to the cellar (drain reroutes humidity outside), or supplemental humidifier failure. Solution: rebalance defrost, sometimes humidification module service.
- Multi-zone temperature drift (multi-zone systems): one zone drifts while others hold. Zone-specific thermostat or zone valve issue.
- Compressor short-cycling: undersized system for actual cellar load (often happens after expansion of cellar inventory or addition of new cases beyond original spec).
- Refrigerant leak. Wine cellar systems often run R-134a or R-410A (newer); some 2024+ Wine Guardian and CellarPro use R-454B (newest green refrigerant, requires R-454B-ready service).
- Condenser issue (split systems with outdoor condensing unit, common for ducted Wine Guardian installs): outdoor unit fan or coil issue.
- Air handler / evaporator fan failure (ducted systems): duct cooling stops reaching the cellar.
- Door gasket compression (cellar door, walk-in style cellars): even small gasket leaks dramatically affect humidity.
- Drain line blockage / drain pan heater failure (cold cellars): water pooling, sometimes ice formation.
- Smart controls / WiFi monitoring failure (modern Wine Guardian, CellarPro, KoolR models): control system drift even though refrigeration is working.
- Vibration issues. Wine doesn't tolerate vibration. Premium systems have vibration isolation that can degrade, transmitting fan or compressor vibration into the cellar racking.
03 · Wine cellar architecture types
Four configurations, four service trees.
Self-contained through-the-wall units
Brands: Breezaire WKL/WKLH, CellarPro 1800, 2200, 4200 series.
Single unit, mounted through the wall of the cellar. Compressor and evaporator combined. Easier service access, but heat is rejected into the adjacent room (which has to be a non-conditioned space or you create a thermal load loop). Limited capacity, suited for small to medium cellars under 1,000 cu ft.
Ducted split systems
Brands: Wine Guardian D-Series, CellarPro Ducted variants.
Air handler in the cellar, condensing unit elsewhere (basement, mechanical room, or outdoor). Higher capacity and quieter cellar than self-contained. More complex service: line set work, ductwork, controls. Most premium restaurant installs use this configuration.
Ductless split systems (mini-split)
Brands: Wine Guardian Mini-Split, KoolR.
Indoor unit on the cellar wall, outdoor condenser elsewhere. High efficiency, multi-zone capable. Premium hotel and restaurant cellars often spec ductless because of the efficiency profile and the cleaner cellar aesthetic.
Custom built-in systems
Architect-designed systems with custom specs. Service requires reading the original installation specs and understanding the engineer's design intent. We coordinate with the original installer when possible; when not, we work from the as-built documentation and field measurements.

Humidity dropped to 38% RH (target 60%). Wine staff worried about cork integrity on $200K+ inventory. Diagnosed: condensate drain rerouted during recent kitchen renovation now exits outside the cellar, taking humidity with it. Rerouted drain back into cellar (sealed condensate basin), added supplemental humidification module. Humidity stabilized at 58% RH within 48 hours. Total: $120 + $480 humidification module + $480 labor = $1,080.

Temp climbing to 68°F. Diagnosed: refrigerant leak at evap coil joint. EPA 608 leak repair: pumped down, brazed joint, evacuated to 500 microns, recharged R-134a. Pulldown to 55°F over 8 hours. Total: $120 + $380 refrigerant + $580 labor = $1,080.

Wine cellar cooling, common questions.
My wine cellar is at 50% humidity. Is that low enough to damage inventory?
50% RH is borderline. Wine cork preservation typically targets 55 to 70% RH. Below 50% extended periods causes corks to dry, shrink, and allow oxygen ingress. Above 80% RH causes label damage and mold risk. Target the middle of 55 to 65% for most cellars. We diagnose humidity drift causes including drain reroute, defrost imbalance, and supplemental humidifier failure.
Do you service Wine Guardian and CellarPro?
Yes. These are our two most common premium wine cellar brands in LA, OC, and Ventura restaurant cellars. Wine Guardian D-Series ducted splits and CellarPro 4200 self-contained units are the most frequent service calls. We carry common evaporator fan motors and humidity components for both lines.
My multi-zone wine room has one zone drifting. Is that the whole system?
Probably not. Multi-zone systems have separate thermostats per zone. One zone drifting equals that zone's thermostat needs recalibration or replacement. Other zones are likely fine. We diagnose per zone rather than assuming a whole-system failure, and we recalibrate against zone-specific spec (red 55 to 58°F, white 50 to 55°F, sparkling 45 to 50°F).
How urgent is wine cellar cooling failure?
Depends on the inventory and the failure mode. Cellar at 65°F for 24 hours: limited damage to most inventory. Cellar at 75°F+ for several days: serious damage to age-worthy wine. Cellar at 80°F+ ever: stop-the-line emergency. We dispatch accordingly and document temperature/humidity recovery for insurance purposes.
Can you work with my sommelier on the diagnosis?
Yes. We routinely coordinate with sommeliers, beverage directors, and wine program managers. They know which inventory is most temperature-sensitive, where the staff has been observing issues, and what the wine program priorities are. Coordinating directly with the wine program saves diagnostic time and protects inventory.
My wine cellar uses R-454B. What's that?
R-454B is a newer green refrigerant (replacing R-410A) used in some 2024+ Wine Guardian and CellarPro models. Different service procedures than R-410A: lower GWP, mildly flammable A2L classification, requires specific tools and recovery equipment. Requires R-454B-ready service training. We have it.
