Standard food-grade silicone or general fryer gaskets aren't rated for repeated pressure cycling and will fail prematurely or, worse, fail catastrophically during a cook cycle. We use OEM Henny Penny or BKI pressure-rated gaskets exclusively. The aftermarket appliance parts industry has tried to substitute lower-cost gaskets here; on a pressure vessel that's a safety problem, not a cost-saving opportunity.
My door interlock won't release. Is the unit broken?
Probably not broken. Door interlocks are designed to prevent lid opening while pressure remains in the chamber, so a 'won't release' interlock often means residual pressure hasn't fully vented. First step: confirm pressure has fully released through the steam vent solenoid valve. If the gauge reads zero and the interlock still won't release, the interlock mechanism itself or the pressure sensor signaling the interlock has failed. Either way, do not force the lid. We diagnose and repair the interlock circuit.
