Hoshizaki service

Why Hoshizaki commercial refrigeration repair requires brand-specific knowledge.

Hoshizaki is one of the most distinctive premium commercial refrigeration brands in the US market. Parent company Hoshizaki Corporation (founded 1947 in Toyoake, Japan) brings Japanese engineering precision to commercial cold storage. US operations headquartered in Peachtree City, Georgia. Premium tier products (HR-Series, HF-Series) assembled in Japan; standard tier US-assembled with Japanese-spec components.

In LA, Hoshizaki has particular dominance in Japanese restaurants, sushi bars, ramen shops, and premium hospitality. There's brand loyalty in this segment that's not random: Hoshizaki engineering reflects the precision sushi chefs and Japanese restaurant operators expect. We service Hoshizaki throughout central LA's Japanese restaurant corridors (Sawtelle Japantown, Little Tokyo, West LA), plus Beverly Hills, Newport Beach, Pasadena, and surrounding areas.

Critical service knowledge: Hoshizaki freezers use hot-gas defrost on most models. This is fundamentally different from True T-49F, Turbo Air M3F, and most other commercial freezer brands which use electric defrost. Hot-gas defrost reverses refrigerant flow during the defrost cycle to melt frost: there's no electric heater element. When a Hoshizaki freezer has defrost issues, the problem is refrigerant-flow components (defrost solenoid, reversing valve, timer), not a heater that doesn't exist. Many techs unfamiliar with Hoshizaki misdiagnose this as "defrost heater replacement," which is impossible because there is no heater. We know the difference.

EPA 608 Universal plus R-290 certification (post-2018 Hoshizaki uses R-290 hydrocarbon refrigerant on many models). BHGS #A49573. BBB A+. Phones answered 24/7. EPA 608 verifiable.

Note: Hoshizaki also makes ice machines (where they dominate the US commercial ice market). This page covers Hoshizaki commercial refrigeration. For ice machine service see commercial ice machine service hub.

Series-aware diagnosis

The Hoshizaki commercial refrigeration lineup.

Hoshizaki uses a tiered naming hierarchy across reach-in, prep, undercounter, worktable, and display formats. Standard tier (CR/CF) is US-assembled with Japanese-spec components. Premium tier (HR/HF) is Japan-assembled with premium components including inverter-driven compressors on many models.

CR-Series Reach-In Refrigerators (Standard Tier)

Single-door (CR1-S), double-door (CR2-S), triple-door (CR3-S) reach-in refrigerators. Standard tier with US assembly and Japanese-spec components. Common in mid-premium restaurants and food service operations.

CF-Series Reach-In Freezers

Single (CF1-S), double (CF2-S), triple (CF3-S) reach-in freezers. Hot-gas defrost standard: refrigerant-flow reversal melts frost on the evaporator without electric heater elements.

HR-Series Premium Reach-In (Made in Japan tier)

Premium reach-ins. Higher build quality, premium components, often inverter-driven compressors. Common in upscale Japanese restaurants and hospitality. HR1A-FS single-door and HR2A-FS double-door variants.

HF-Series Premium Freezer

Premium freezer reach-ins matching HR-Series quality. Hot-gas defrost. Service approach mirrors HR but with the freezer-specific defrost-cycle diagnostics.

PR-Series Pass-Through

Back-to-back access reach-ins for prep line setups. Two doors, opposite sides of the cabinet, useful in tight kitchens where the cabinet bridges prep and service zones.

CRMR Prep Tables

Refrigerated prep tables. CRMR27 (27" small), CRMR48 (48"), CRMR67 (67"), CRMR93 (93"). Commercial cold rail with refrigerated storage below.

CRMF Prep Freezers / HPR Premium Prep

CRMF: prep tables with freezer storage below. HPR: hospital-spec and premium kitchen prep refrigerator.

HUR / HUF Undercounter

HUR (refrigerator) and HUF (freezer) undercounter units. HUR-15, HUR-24, HUR-48 standard sizes. Common in Japanese restaurants and sushi bars where refrigerated bottle/ingredient storage is needed at compact spec.

HWR / HWF Worktables and HSF / RH1 Display

HWR/HWF: refrigerated worktable surfaces for sushi prep and prep line stations. HSF (bakery/display freezer) and RH1 (display refrigerator) for showcase applications.

Common scenarios

Top Hoshizaki failures we see in our 5-county territory.

In rough order of frequency on Hoshizaki commercial refrigeration calls:

  1. Defrost solenoid valve failure (CF/HF freezers, year 6 to 9). Hot-gas defrost cycle requires solenoid valve to reverse refrigerant flow. When solenoid sticks or fails, the defrost cycle doesn't work and frost builds. Replacement requires Hoshizaki-specific knowledge: this is NOT a defrost heater (no heater exists on these models).
  2. Defrost timer / control board. Manages the hot-gas defrost cycle. Different from electric-defrost timer in True or Turbo Air units.
  3. Condenser fan motor (year 5 to 7). Japanese-spec motor, OEM only. Coastal accelerates failure.
  4. Evaporator fan motor (year 6 to 8). Japanese-spec component.
  5. Compressor capacitor / start relay (year 8 to 12). Premium Japanese-spec components.
  6. Door gasket replacement (year 4 to 6). Hoshizaki uses magnetic gaskets with anti-microbial inner liner. Model-specific dimensions.
  7. Refrigerant leak (any age). EPA 608 leak repair before recharge. Post-2018 R-290 systems require R-290 certification beyond standard EPA 608.
  8. Inverter compressor issues (HR/HF premium tier). Premium tier uses inverter-driven compressors. Service requires specific knowledge of variable-speed control.
  9. Reversing valve (hot-gas defrost systems). When the reversing valve fails, defrost cycle reverses but main cooling cycle is also affected. Diagnostic with refrigerant gauges plus temperature mapping.
  10. Cold rail temp drift (CRMR prep tables). Same as other prep tables: evaporator coil cleaning resolves 80% of issues.

Real repairs

Composite stories from the route.

Five Hoshizaki commercial refrigeration jobs from the past 90 days. Models, symptoms, diagnosis, parts, time, total. Names omitted; the technical scenarios are typical of what we see weekly.

Sushi restaurant on Sawtelle Blvd, West LA · Hoshizaki HR2A-FS premium reach-in (8 years, R-134a)

Center temp climbing during dinner service. Diagnosed: condenser fan motor seized (Japanese-spec OEM motor). Ordered Hoshizaki OEM via Peachtree City distribution. 4-day standard ship. Returned with motor, replaced. Tested pulldown. Total: $120 first visit plus $480 part plus $290 return labor = $890. Premium tier reach-ins use Japanese-spec motors that aren't aftermarket-replaceable.

Ramen shop in Little Tokyo · Hoshizaki CF1-S single-door freezer (9 years)

Frost building inside, freezer warming. Critical diagnosis: tech experienced with Hoshizaki immediately identified hot-gas defrost solenoid valve failure (NOT defrost heater; Hoshizaki doesn't have heater elements on this model). Replaced solenoid valve. Tested defrost cycle. Total: $120 plus $385 part plus 2 hours = $700. Owner had previously been told by another shop "needs new defrost heater $800," which is impossible because hot-gas defrost has no heater.

Japanese restaurant in Beverly Hills · Hoshizaki CRMR67 prep table (6 years)

Cold rail at 47°F. Diagnosed: evaporator coil fouled with prep debris (typical 5-6 year buildup in busy sushi prep). Deep cleaned evaporator with food-safe cleaner, cleared drain line. Pulldown to 39°F. No parts needed. Total: $120 plus 1.5 hours = $360.

Hotel kitchen in Pasadena · Hoshizaki HUR-24 undercounter (7 years)

Won't cool. Diagnosed: refrigerant leak at evaporator brazed joint (R-290 system, propane refrigerant, requires R-290 certification). Pumped down, brazed repair, evacuated, recharged R-290. Total: $120 plus $620 refrigerant plus $580 labor plus leak detection = $1,320.

Premium sushi bar in Newport Beach · Hoshizaki HR1A-FS premium single-door (11 years)

Inverter compressor issue. Diagnosed: variable-speed compressor module degraded (inverter-driven compressor specific to premium HR tier). Replaced inverter module. Tested through full operating range. Total: $120 plus $980 part plus 3 hours = $1,400. Premium tier servicing requires Japanese-spec OEM and inverter knowledge.

FAQ

Hoshizaki commercial refrigeration questions.

Why does my Hoshizaki freezer not defrost properly even though the heater is good?

Trick question. Hoshizaki freezers don't have defrost heaters. They use hot-gas defrost: refrigerant flow reverses during the defrost cycle to melt frost. If your shop quoted 'defrost heater replacement' on a Hoshizaki, they don't know the brand. The actual issue is the defrost solenoid valve, defrost timer, or reversing valve. We diagnose correctly.

What's the difference between CR-Series and HR-Series?

CR is standard tier (US-assembled with Japanese-spec components). HR is premium tier (Japan-assembled, premium components, often inverter-driven compressors). HR costs more upfront but typically 12 to 15+ year service life vs 8 to 12 on CR. Both excellent quality.

My Hoshizaki uses R-290. What's that?

R-290 is propane: hydrocarbon refrigerant Hoshizaki transitioned to post-2018 for environmental compliance. Different service procedures than R-134a or R-404A. Requires R-290 certification beyond standard EPA 608 Universal (#1346255700410). We have it.

Do you service Hoshizaki at sushi restaurants and Japanese kitchens?

Yes. Japanese restaurant equipment service is a significant portion of our Hoshizaki work. Sushi bars and ramen shops along Sawtelle Blvd, in Little Tokyo, and in sushi-row neighborhoods often have full Hoshizaki kitchens (multiple reach-ins, prep tables, undercounter, plus separate Hoshizaki ice machines).

Hoshizaki ice machines vs Hoshizaki refrigeration: same service path?

Different service line. Hoshizaki dominates the US commercial ice machine market; that's a separate equipment category with separate parts catalogs and service procedures. This page covers commercial refrigeration (reach-ins, prep tables, undercounter). For ice machines see our commercial ice machine service hub.

How long do Hoshizaki commercial refrigerators last?

Standard CR/CF tier: 10 to 13 years inland, 8 to 11 coastal. Premium HR/HF tier: 12 to 18 years inland, 10 to 14 coastal. Hoshizaki construction is among the highest in the industry.

What's your warranty?
